A spam trap is an address that belongs to no real person and is used to catch senders with poor practices. Mail hitting one signals that a list was built incorrectly or has gone stale.
There are pristine traps (never subscribed) and recycled traps (abandoned mailboxes). You avoid them only through first-party collection, double opt-in and regular list hygiene.
